Halibut.
Prized by chefs for the way it holds its shape when cooked, halibut is a lean fish with mild, sweet taste. It is thicker and firmer than cod.
We love it as fish & chips or simply baked with lemon and dill.

Lingcod.
This is one of our family’s favourite fish. Lingcod is a lean white fish with a mild flavour. It is tender yet firm and cooks into large moist flakes.
As the kids like to say, “It’s an ugly fish but it tastes great!” We love it in curries and as fish tacos.

Sablefish.
Also known as blackcod or butterfish, sablefish is a highly valued fish. Captain Jordan finds it 300 fathoms (1800 feet) below the surface. Since it lives so deep in the ocean, sablefish have the highest omega-3 content of any white fish making it one of the easiest to cook.
We love it marinated in lime juice and cooked in a ginger miso broth. You can find our recipe on our recipe page.

Red snapper / rock cod.
There are 34 different rock cod species on the BC coast. These include the red snapper, shortspine thorny head, china, copper, tiger, … (I could go on for a while).
They are a mild fish with a slight sweetness. They have a lower fat content than some of the other fish we have available making them lighter in taste and texture.
We prepare these similar to how we would halibut and lingcod. Fish fry, fish tacos or baked with lemon and dill.

Salmon.
On a good salmon season we will have coho, chinook and chum salmon.
Nothing beats a salmon cooked on the BBQ, although every year we’ll also get some smoked and pull out the canner to make our own canned salmon.

Tuna.
At the end of summer / early fall, the albacore tuna migrate into Canadian waters. Albacore tuna have a mild to medium flavour and high oil content giving a richness of taste.
We can our whole tuna for amazing sandwiches and casseroles.
