Pagliaci’s “Prawn Broker”
Another great prawn recipe from our customers.
In a blender combine a big scoop of red Thai curry paste, a can of coconut milk and some mango chutney.
Roast 1/2 cup cashews in a large frying pan, add the blended stuff, 1/2 cup whipping cream and some vegetables like pea pods and red pepper and reduce until it is a bit thick then toss in your raw peeled prawns until cooked (about 30 seconds - 2 minutes depending) squeeze a lime in and voila!
Serve over pasta!
